64% Dark Chocolate Bar with Candied Orange

Chocolate is made from cocoa and sugar with cocoa butter added during conching. The cocoa paste is slowly worked with granite stone and, after refining, it is whisked in the basin for three days and three nights without stopping, becoming "velouté".
