For our hot chocolate, we use Santé chocolate — created in the 19th century and made only with cocoa and sugar.
Named Santé to distinguish it from chocolate often adulterated with additives and emulsifiers.
The absence of conching, which was unknown at the time, makes the chocolate unshapable and suitable for grating.
It was consumed by adding hot milk directly to the previously grated chocolate in the cup.
