Pack of confetti and sweet ravioli
During the carnival in Genoa a singular dessert was produced that originated in home confectionery. They were the “good bite pastissotti” or sweet ravioli.
Even today, ravioli are made by filling a sheet of almond paste in the shape of a small ravioli with apricot jam. Colored apricot jam and granulated sugar are spread on the ravioli, reminiscent of sauce and a sprinkling of cheese.
The confetti are our creation, they consist of small balls of "fondant" almond paste scented with rum, maraschino, vanilla and coffee, partially covered in bitter dark chocolate.
