Still called with the ancient name of "Rosé Sugar", the preserve of fresh rose petals was born even before our confectionery. Produced according to a recipe from the 1600s, it is a mixture which is neither a jam nor a compote but is a product in itself of ancient pharmaceutical origin. Our roses, whose petals are separated manually, come from small producers in the Genoese hinterland. They mainly belong to three qualities: Gallica, Muscosa and Rugosa.
