Glazed Candied Fruit

The Genoese art of candying continues in our workshops. We only use fresh, ripe apricots, oranges, figs, clementines, medlars, pears, peaches and plums, which we process with glucose syrup, using traditional craft methods handed down from generation to generation, following the slow production processes learned in the Orient at the time of the first crusade.
