The full and enveloping flavor of milk chocolate, prepared following the dictates and techniques of the ancient confectionery recipe books. It is produced with cocoa, milk and sugar with the addition of cocoa butter during conching. The cocoa mass is worked slowly with the granite stone and, after refining, it is beaten in the basin for three days and three nights without stopping, becoming "velouté".
