Our longitudinal conching machine transforms the very purest cocoa to create 80% dark chocolate. We use only cocoa, cocoa butter and sugar, to obtain a bar of pure chocolate. The cocoa paste is kneaded slowly on a granite block and, after refining, undergoes continuous conching for three days and nights until it takes on a velvety texture.
